Shrimp Fajitas

I believe it’s safe to say you can never go wrong with fajitas! What I love about this recipe is how easy and quick it is from start to finish. Two other awesome facts you should know are it’s healthy and hardly makes any mess! Combining all your ingredients on to a baking sheet and tossing it in the oven for a total of 10 minutes, creates an effortless dinner all while being extremely tasty. Enjoy!


Ingredients

  • 1 pound shrimp, peeled and deveined

  • 1 sweet onion, sliced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 orange bell pepper, sliced

  • 2 limes

  • 2-3 tbsp olive oil

  • Handful fresh cilantro, chopped

  • Seasoning: 2 tsp chili powder. 1 tsp of salt, smoked paprika, white or brown sugar, ground cumin, garlic powder, onion powder. ½ tsp cayenne pepper. *You may add a little more of each seasoning or adjust to your liking. You can also simply use a packet of fajita seasoning.

  • Flour tortillas

  • Topping ideas: sour cream (or Greek yogurt with lime juice instead), guacamole, cheese


Instructions

  1. Preheat oven to 450. Prepare two baking sheets lined with parchment paper and set aside.

  2. Place sliced veggies and thawed shrimp in a large mixing bowl. Drizzle with olive oil.

  3. Combine all seasonings into a small bowl and mix together. Then, sprinkle half the mixture onto the shrimp and veggies, toss well. Sprinkle the rest of the seasoning, toss once more.

  4. Lay out an even layer of the shrimp and veggies between onto two trays.

  5. Cooking one tray at a time, bake for 8 minutes then turn to broil for another 2 minutes. Remove first tray from oven and repeat with the second tray.

  6. As they come out of the oven, sprinkle with cilantro and squeeze fresh lime juice over top.

  7. Transfer shrimp and veggies from baking trays to one serving bowl.

  8. Serve with warm tortillas and toppings.
