Hogfish Ceviche

Like I have mentioned before, I am lucky to be living in Florida with friends who fish. Spearfishing is even better because that means my most favorite fish can be shot for an incredible fish dinner, hogfish! Ceviche is one of my favorite seafood dishes to eat. Besides my favorite Peruvian restaurant and ceviche spot in Miami, nothing beats making homemade ceviche with a fresh catch right off the boat! If you are using store bought fish, make sure to ask for a fish that will be safe for making ceviche. The acid from the citrus will “cook” the raw fish. The juices are just incredible. Hogfish has such a buttery meat, it made this ceviche irresistible.


Ingredients

  • 1-2 filets of hogfish (or another white fish)

  • 2 limes, juiced

  • 1 lemon, juiced

  • 1 orange, juiced

  • 1 jalapeno, thinly sliced

  • ½ red onion, thinly sliced

  • 2-3 tablespoons fresh cilantro, chopped

  • Sea salt


Instructions

  1. In a glass or ceramic bowl add onions, jalapeno, cilantro, then top with fish.

  2. Sprinkle with salt.

  3. Squeeze fresh citrus juice over top. Save 1 lime for later.

  4. Cover and refrigerate for 3-4 or overnight is great too.

  5. Strain a little of the juice.

  6. Then top with freshly squeezed lime juice once more, serve cold.
