Spicy Garlic Shrimp

This makes a fantastic weeknight recipe! From start to finish it is done in no time. You’ll definitely want something to soak up the delicious juice. Using crusty Italian bread is delicious for soaking, although pasta, rice or another grain works just as well and is equally amazing. If you don’t like spice, skip out on the red chili pepper. However, the lemon, garlic and butter are important ingredients that become incredibly delightful when married together. If you are using frozen shrimp, be sure to thaw the shrimp before cooking.

Ingredients:

  • 1 lb. raw jumbo shrimp, peeled and deveined

  • 8 cloves garlic, minced

  • 1 lemon, zest and juice

  • 1 bunch of fresh parsley leaves, chopped

  • 1 red chili pepper

  • ½ stick butter (4 tbsp)

  • 3 tbsp olive oil

  • Salt

  • Pepper

  • Crusty white baguette

Instructions:

  1. Heat butter and olive oil in a large skillet over medium heat until butter is melted. Heat on medium-low, add garlic and chili pepper and lightly saute until fragrant. Do not burn the garlic. 

  2. Add shrimp, season with salt and pepper, stir to combine. Saute shrimp on medium heat for about 3-4 minutes.

  3. Add chopped parsley, lemon zest and juice. Toss to combine. Serve hot with thick slices of the crusty bread to soak up the sauce.
