Tuna Poke

I’ve said it before...having friends who fish is AWESOME! I just received a grand supply of fresh tuna and poke bowls instantly came to mind! There is no cooking involved, which makes this super easy. The longest part is just prepping your toppings, besides that it is extremely simple. Most importantly, make sure you have sushi grade ahi tuna. I love how you can build your own bowl with this type of recipe. It is a great dinner idea for a crowd because you can set up your topping bar and enjoy your company. It’s kind of like a taco night, but with sushi. Plus all these flavors come together so nicely making every bite irresistible!


Ingredients

  • 3-4 sushi grade ahi tuna steaks. cubed

  • 4 scallions, sliced- whites and greens separated

  • ¼ cup edamame beans, precooked

  • ½ cucumber, cut to your liking: sliced, diced, julienned, ribbons, etc.

  • Handful fresh cilantro, chopped

  • 1 avocado, sliced or cubed

  • 1 jalapeno, sliced

  • 1-2 teaspoons fresh ginger, minced

  • Mango, cubed

  • ¼ cup sesame seeds

  • 2 tablespoon toasted sesame oil

  • 1 tablespoon sweet chili sauce

  • 2 tablespoon soy sauce

  • Mayo

  • Sriracha

  • 1 lime, sliced

  • Pickled ginger

  • 2-3 cups cooked jasmine rice


Instructions

  1. First, prepare your toppings into small bowls and set aside: cubed mango, sliced avocado, sliced jalapenos, cut cucumbers, chopped cilantro, edamame beans, pickled ginger, sesame seeds, sliced scallion greens.

  2. Next, whisk together ingredients for your sauce into a medium sized bowl and set aside: soy sauce, sesame oil, sweet chili sauce, minced ginger, sliced scallion whites, few sprinkles of sesame seeds.

  3. Then, cut your tuna steaks into cubes and place in the bowl with sauce. Stir to combine well, if you feel like you need more sauce go ahead and add how much you’d like of the soy sauce, sesame oil, or sweet chili.

  4. Finally, build your bowl. Start with a base of rice, then add a scoop of tuna. Lastly, top with your selection of toppings. In a small bowl, whisk together a couple spoons of mayo and a few squirts of sriracha. This makes a great sauce to drizzle on top or to use as a dipping sauce.
