Mediterranean Chicken Boats
I love how light and healthy this dinner is. It might be a lot to prep, but for the most part it’s all very easy. They are extremely flavorful, healthy and it’s something different to enjoy for a lovely dinner.
Ingredients
- 4 chicken breasts: cleaned, trimmed of fat, cut into small cubes 
- Tomatoes- diced 
- 3 cloves of garlic 
- 1 tablespoon of coconut or olive oil 
- Red pepper flakes 
- Salt and pepper 
- Dried oregano 
- Cucumbers- diced 
- Your favorite hummus 
- 1-2 lemons 
- Pepperoncini 
- Kalamata Olives 
- Feta cheese 
- Romaine lettuce 
Tzatziki sauce:
- 1 serving size container of plain Greek yogurt 
- 3 cloves garlic minced 
- 1/2 lemon for fresh juice 
- 1 tablespoon finely chopped or minced cucumber 
- finely chopped fresh dill 
Instructions
- Prepare you platter with all your toppings: tomatoes, cucumbers, hummus, tzatziki, lemon wedges, pepperoncini, olives, feta, lettuce 
- For the tzatziki sauce: mix all its ingredients together well and refrigerate until ready to use. 
- Heat a pan, just to saute the oil, garlic and pepper flakes. Be careful not to burn the garlic so saute on low. Add chicken, season with salt, pepper and oregano. Squeeze 1/2 a lemon over top for the juice. Mix lightly and let cook. After a few minutes, toss chicken around to cook evenly. 
- Once the chicken is cooked, transfer to a plate and serve with the platter. Begin to assemble your boats.
